CRANBERRY ORANGE BREAD | |
2 c. all-purpose flour 1 1/2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 c. sugar 1 egg, beaten 1/2 c. orange juice Grated rind of 1 orange 2 tbsp. melted butter 2 tbsp. hot water 1 c. raw whole cranberries 1 c. chopped pecans Combine flour, baking powder, soda, salt and sugar in large mixing bowl; set aside. Mix beaten egg with orange juice, rind, butter and hot water. Fold flour mixture into egg mixture until well blended. Do not beat. Gently fold in cranberries and pecans. Spoon into greased 9 x 5 x 3 inch loaf pan. Bake at 325 degrees for 60 minutes. |
