SQUASH CASSEROLE 
2 1/2 lb. yellow squash
8 oz. sour cream
1/4 c. onion (medium onion)
1 can cream of chicken soup
1 box Stouffer's chicken flavored stuffing mix
1/2 c. grated Cheddar cheese
1 stick butter

Cook squash and onion together until tender. Drain water from squash and mix with sour cream and soup. Set aside. Mix stuffing mix with melted butter. Place 1/2 of stuffing mix in 2-quart casserole dish. Pour squash mixture on top of stuffing mix. Sprinkle remainder of stuffing mix on top of squash mixture.

Bake, covered, at 375°F for 45 minutes. Remove from oven and sprinkle cheese. Return to oven until cheese melts.
