GRANNY'S BANANA NUT BREAD | |
1/3 c. shortening 1/2 c. sugar 2 eggs 1 3/4 c. sifted enriched flour 2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. baking soda 1 c. mashed ripe bananas 1/2 c. broken nuts (pecans or walnuts) Cream shortening and sugar; add eggs and beat well. Sift together dry ingredients, add to creamed mixture alternately with banana, beating well after each addition. Stir in nuts. Pour into a well greased 8 1/2" x 4 1/2" x 2 1/2" loaf pan. Bake in moderate oven, 350 degrees, about 1 hour or until you think it is done. Remove from pan, cool on rack. Wrap, store at least one day. |
