4 lbs. figs, peeled if desired 3 lbs. sugar Add sugar to figs and let stand 2 hours. Add: 1 sm. piece of ginger (opt.) When the mixture has stood for 2 hours, cook very slowly, then boil hard until clear. Remove fruit and boil syrup until desired thickness. Drop figs back in syrup and bring to a boil. Set aside until cold. Pack in jar and process 15 minutes. |
