FIG PRESERVES 
1/2 bushel ripe figs (leave stems on)
10 lbs. sugar
3 to 4 lemons, sliced thin
1 pt. water

Start water and sugar to boiling. Wash figs and drop into boiling syrup. Slice lemons and add to figs. Cook in pot large enough to boil rapidly; do not stir if possible. When figs look clear and syrup flakes from spoon fill sterilized jars and seal. Water bath for 5 minutes.
