MOM'S FIG PRESERVES | |
6 qts. figs 4 qts. water 6 1/2 c. sugar 2 sliced lemons 6 qts. boiling wtaer Wash, peel and remove stems from firm ripe figs. To peel, cover with 6 quarts boiling water. Let stand 5 minutes. Drain, rinse in cold water and peel off peeling next. Mix in the sugar and water together. Boil until sugar is dissolved. Add figs and cook until clear about 2 hours. If syrup becomes too thick before figs are done, add a half cup boiling water. Take off fire, let stand to plump up. Put figs into jars. Heat syrup again to boiling and pour over figs. Put on lids. Process in hot water bath for 15 minutes. |
