SPINACH PUFF, CORN PUFF OR
BROCCOLI PUFF
 
2 pkg. (10 oz. each) frozen vegetables (chopped spinach, chopped broccoli or corn)
1 c. Bisquick baking mix
1 c. milk
2 eggs
1/2 tsp. salt
1 c. shredded Cheddar cheese

Heat oven to 325 degrees. Butter 1 1/2 quart casserole dish. Cook vegetable as directed on package and drain. Beat baking mix, milk, eggs and salt until smooth. Stir in vegetable. Pour into baking dish and bake until knife inserted halfway between center and edge comes out clean, about 1 hour. Serve immediately. Serves 6.
