CHEESE & SPINACH PUFFS | |
1 (10 oz.) pkg. frozen, chopped spinach 1/2 c. chopped onions 2 slightly beaten eggs 1/2 c. grated Parmesan cheese 1/2 c. shredded Cheddar cheese 1/2 c. blue cheese dressing 1/4 c. butter 1/2 tsp. garlic powder 1 pkg. corn muffin mix In saucepan, combine spinach and onion. Cook according to spinach directions. Drain. Press out liquid. Combine eggs, cheese, salad dressing, butter and garlic powder. Add spinach and muffin mix. Mix well. Cover and chill. Shape into 1 inch balls. Cover and chill or freeze. To cook, place on baking dish. Bake at 350 degrees until light brown. Makes about 60. |
