SIMPLE POTATO PANCAKE | |
1 large potato (can be russet) Chopped onion, to taste Salt/pepper, to taste little oil Wash/peel potato. (Can leave peel on if desired). Using box cutter (used for coleslaw) simply shred potato using large hole. Chop onion fine, add to shredded potato. Simply press portions into shape by hand. Fry in small amount of oil, flipping when one side browns. (Adding small amount of butter to oil - creates a faster browning and does add to the taste). So simple - so delicious. Any recipe calling for "shredded potato" is now as easy as your box grater + potato. By the way ~ you will not believe how much will be created - with just ONE potato. Submitted by: Phyllis Chittum |
