RAISIN-NUT-MAYO-CAKE 
3 c. unsifted flour
2 c. sugar
1 c. mayonnaise
1/3 c. milk
2 eggs
2 tsp. baking soda
1 1/2 tsp. ground cinnamon
1/2 tsp. nutmeg
Salt
1/4 tsp. ground cloves
3 c. chopped peeled apples
1 c. seedless raisins
1/2 c. coarsely chopped walnuts

MAYONNAISE:

1 1/2 tbsp. potato starch
1/4 tsp. dry mustard
1/2 tsp. salt
2 tsp. sugar
1/4 c. cold water
3/4 c. boiling water
2 tbsp. lemon juice
1 tbsp. vinegar
1/2 c. oil
Pepper

Combine starch, mustard, salt and sugar in saucepan. Stir in cold water and mix well. Add boiling water and cook just until mixture is clear. Cook to lukewarm. Beat in lemon juice and vinegar, then gradually add oil in thin stream, beating constantly, until thickened. Season with pepper to taste and refrigerate. Makes 1 1/2 cups or 24 servings.

Note: Dressing is slightly thinner than normal mayonnaise. Calories 45, sodium 49 milligrams, fat 4.6 grams, carbohydrates 1.1 grams.
