PUMPKIN - RAISIN - NUT CAKE | |
2 c. sugar 1 c. vegetable oil 4 eggs 2 c. self-rising flour 2 tsp. cinnamon 1 tsp. nutmeg 1/4 tsp. cloves #2 can (2 c.) pumpkin 3/4 c. seedless raisins 1 c. chopped nuts 1/4 c. vegetable oil 1/4 c. self-rising flour Using medium speed of mixer, cream sugar and oil until smooth. Add eggs, one at a time, beating after each addition. Sift 2 cups flour with spices three times. Add and mix until smooth. Add pumpkin and mix thoroughly. Now mix raisins and nuts with the 1/4 cup flour and 1/4 cup oil. Add this mixture to main cake mixture. Bake in three 8 inch or two 9 inch greased and floured layer pans. Bake at 325 degrees for 30 to 35 minutes or until done. This is a moist cake and needs to set awhile before cutting. Best frosting is cream cheese. |
