LENTIL - KIELBASA 
1 pkg. lentils
6 to 8 c. water
2 cans sliced tomatoes & juice
1 to 2 lbs. Kielbasa, sliced
6 to 8 slices bacon
1 c. chopped celery
1 med. onion, chopped
1 c. carrots, grated
1 c. green pepper, chopped

Wash lentils and drain. Combine lentils, water and tomatoes, bring to a boil and simmer 20 to 30 minutes. Add sliced sausage and simmer for another 20 minutes. Add bay leaf and other seasonings as you desire (pepper, salt, thyme, etc.). Meanwhile, cut up bacon and fry until partially crisp. Saute celery, onion, green pepper and carrot about 15 minutes with bacon then add entire mixture to soup. Simmer about 40 minutes or until beans are done.
