CHOCOLATE FROSTED SOUTHERN PECAN
PIE SQUARES
 
CRUST:

2 c. sifted all purpose flour
1/4 c. sugar
1/2 tsp. salt
1/2 c. unsalted butter, melted

FILLING:

3 eggs, lightly beaten
1 c. sugar
1 c. light corn syrup
2 tbsp. butter, melted
1 tsp. vanilla
2 c. chopped pecans

FROSTING:

6 oz. chocolate chips
1/4 c. milk
2 tbsp. butter
2 tbsp. sugar

CRUST: In a large mixing bowl, combine flour, sugar, salt and butter. Mix until it resembles coarse meal. Press mixture firmly into a greased 13"x9"x2" baking pan. Bake in preheated 350 degree oven for 20 minutes.

FILLING: Combine eggs, sugar, corn syrup, butter, vanilla and pecans. Pour over baked crust and return to oven 25 to 35 minutes.

FROSTING: On low heat, melt butter, milk and sugar, stirring constantly until blended. Pour in chips and stir until melted. Drizzle or spread over squares. Cut in squares when cool. Enjoy.
