OLD FASHIONED CHEWY OATMEAL
COOKIES
 
1 c. shortening
2 c. brown sugar, packed
1 tsp. vanilla
1/2 tsp. salt
2 eggs
1 tsp. baking soda
1/4 c. boiling water
2 c. flour
2 c. oatmeal

Blend shortening, brown sugar, vanilla, salt, and eggs. Dissolve soda in boiling water and mix with sugar mixture. Add flour and oatmeal a little at a time until blended. Can add nuts, raisins, or chocolate chips if desired. Drop by spoonfuls on greased cookie sheet. Bake at 400 degrees for 9-12 minutes for chewy cookies; leave center not quite done for crunchier cookies. Cook until brown in middle. Makes 3 dozen.

THIS WAS THE BEST DARN COOKIE I EVER MADE! These were soft, chewy, and simply wonderful! Better than McDonalds. I added one tsp of cinnamon because the recipe didn't call for it and it was just right. I used one cup each of dark and light brown sugar also. Please try this recipe, you will love it.

I've been trying to find the perfect recipe for these cookies for 40 years and this is it! Split the batter and did half the batter oatmeal raisin adding about a teaspoon of cinnamon and the other half chocolate chips. Will never find a better recipe. Only one other change and that was to bake at 375 °F, not 400°F. Perfect in 13 minutes :)
