COOKING WITHOUT LOOKING SUNSHINE
CHICKEN
 
2 to 3 tsp. curry powder
1 1/4 tsp. salt, optional
1/4 tsp. pepper
6 chicken boned and skinned chicken breast halved
1 1/2 c. orange juice
1 c. UNCLE BEN'S® converted rice
3/4 c. water
1 tbsp. brown sugar
1 tsp. dry mustard and chopped parsley

Combine curry powder, 1/2 of the salt and pepper and sprinkle over chicken. Rub seasoning in chicken, set aside. In 10 inch skillet combine rice, water, brown sugar, mustard and remaining 3/4 tsp. salt and mix well. Arrange chicken pieces over rice, bring to boil cover and simmer 20 minutes. Remove from heat and let stand covered until liquid is absorbed. Sprinkle parsley.
