SCALLOPED POTATOES AND HAM 
6-8 potatoes, according to size
2 tbsp. minced onion
2 tbsp. butter
Leftover ham as desired
2 tbsp. flour
1 qt. milk
1/2 tsp. salt
Cracker crumbs or substitute

Peel potatoes and slice thin. Place a layer of potatoes in a flat baking dish. Sprinkle lightly with flour; add a layer of diced ham. Sprinkle with minced onion. Alternate layer of potatoes and ham until all is used.

Scald the milk; add the butter, salt and pour over top. Put a ring of cracker crumbs around inside of pan. This prevents it from boiling over. Bake at 350 degrees for 1 hour or until done and lightly browned on top.
