4 med. baking potatoes 1/4 c. butter 1/8 tsp. pepper Parmesan cheese Preheat oven to 425 degrees. Scrub potatoes and pat dry. Do not peel. Cut potatoes in half lengthwise and each half into four wedges. Melt butter in a long shallow baking pan in the oven. Remove pan from oven and brush potato wedges with butter covering all sides. Sprinkle with pepper and Parmesan cheese. Place potatoes, skin side down in pan. Bake 40 minutes or until tender and crispy brown. If falls on sides, turn to other sides halfway through baking. 4 to 6 servings. |
