PORK MEDALLIONS WITH BLACK BEAN
SAUCE
 
Pork loin
Shredded green onions
Carrots
Water chestnuts

MARINADE:

4 1/2 tsp. soy sauce
1 tsp. rice wine or sherry
2 tbsp. water
2 tsp. cornstarch
Black bean sauce (just a drop)

BEAN SAUCE:

1 1/4 tsp. black bean sauce
1 1/4 tsp. rice wine
1 tbsp. soy sauce
2 tsp. sugar, mix well

Heat 2 tbsp. oil in wok, cook meat until brown. Push aside, add vegetables, cook until desired doneness, add chestnuts, and bean sauce. Serve over chow mein noodles or accompaniment of choice. Could be served over raw shredded green onions or lettuce.
