ELSA'S PIMIENTO CHEESE 
1 lb. sharp cheese
4 oz. jar pimientos, drain & finely chop
1 tsp. prepared mustard
1/2 tsp. salt
1/4 tsp. black pepper
Dash of sugar
1/2 tsp. vinegar
1 1/2 c. mayonnaise

Grate cheese. Add pimiento, then mustard, salt, pepper, sugar and vinegar. Mix and add mayonnaise; mix well.

You can use medium sharp cheese, but I like the sharp better. You may need a little more vinegar and seasonings - just give it a taste. Don't let up on the mayonnaise for it will not be too much after it has been in the refrigerator.
