PIMIENTO CHEESE SPREAD 
1/2 c. sugar
2 tbsp. all purpose flour
1 egg
1/4 c. vinegar
Pinch of salt
1 (16 oz.) carton pasteurized process cheese spread, cubed
1 (2 oz.) jar pimientos

Combine sugar, flour, egg, vinegar and salt in saucepan. Cook over medium heat, stirring occasionally, until sauce is thickened. Add cheese and pimientos and cook over low heat, stirring until smooth. Cool, then store in refrigerator. Spread on bread for sandwiches. Yield: 4 cups.

This is the recipe I've been searching high & low for in my kitchen---except I use Extra Sharp Cheddar. A friend shared this with me in the 1960's and I use it often.

I mixed this recipe with another pimento cheese spread recipe that used mayo, cheddar cheese, and cream cheese and the combination was out of this world. I also added a couple more tablespoons of vinegar and 2 tablespoons less sugar than the recipe calls for because I like mine with a little more bite and not so sweet.
