MARINATED CUCUMBERS 
3 lg. cucumbers
2 tsp. salt
3/4 c. tarragon vinegar
2 tbsp. sugar
1/4 tsp. pepper
Parsley, chopped
1/2 pt. sour cream

Peel cucumbers and cut into thin slices. In a large shallow dish, lightly toss cucumbers with salt. Combine vinegar, sugar, and chopped parsley; mix well. Toss cucumbers with vinegar mixture. Cover lightly and let stand overnight. Pour off liquid before adding sour cream shortly before serving. P.S. I add about 6 thin slices of red onion with cucumbers to give it flavor.
