MARINATED CUCUMBERS 
3 lg. cucumbers
Salt
3/4 c. cider vinegar
1/4 c. sugar
1/4 c. chopped parsley
4 green onions, chopped

Peel cucumbers, cut in half lengthwise, seed, slice very thin, sprinkle lightly with salt and let stand for 1 hour. Drain. Combine vinegar, sugar, parsley and green onions. Pour over cucumbers and marinate for 2 to 3 hours. Drain. Combine sauce ingredients; toss cucumbers carefully with sauce.

SAUCE:

1 c. sour cream
1 tbsp. sugar
1 tsp. dry mustard
2 tbsp. cider vinegar
1 tsp. salt
