ZUCCHINI AND GREEN RICE 
1 1/2 lb. zucchini
2 c. cooked brown rice
Juice of 1 lemon
3/4 c. chopped parsley
1 tsp. salt
Pinch of pepper
1 tsp. dried basil
2 tbsp. oil
1 c. lowfat cottage cheese
1/2 c. grated Cheddar cheese
2 tbsp. grated Parmesan cheese

Slice zucchini in 1/4 inch rounds. Steam until done but still firm. Preheat oven to 350 degrees. Mix rice with lemon juice, parsley, salt, pepper and basil. Rub oil inside baking dish and layer rice mixture, cottage cheese and zucchini. Top with Cheddar cheese. Bake uncovered for 10-15 minutes. Sprinkle with Parmesan cheese. Serves 4-6.
