ZUCCHINI SOUP IN RICE 
1/2 c. chopped onions
1 clove garlic, crushed
1 tsp. butter
1 qt. chicken broth
2 c. sliced zucchini
1/2 tsp. salt (optional)
1/4 tsp. fresh ground pepper
1/4 tsp. sate
1/4 tsp. thyme
1/2 c. uncooked brown rice (Basamati is great)
Grated Parmesan cheese

Cook onions and garlic in butter until soft. Add remaining ingredients, except zucchini and Parmesan. Bring to a boil. Stir once or twice. Lower heat and simmer 40 minutes. Add zucchini last 20 minutes. Serve with grated Parmesan. Serves 6.
