PILGRIM BAKED BEANS (OLD-TIME) | |
2 c. navy beans 1/2 tsp. baking soda 1 med. yellow onion 1/2 lb. bacon, cut into pieces 3 tbsp. dark molasses 1 tbsp. cider vinegar 1 tsp. dry mustard 1/4 c. brown sugar 1 tsp. salt 1/4 tsp. pepper Soak beans overnight. Drain and rinse beans, then cook beans with baking soda. Simmer beans for 20 minutes. Drain beans. Layer beans, bacon and diced onion in a large baking dish. Mix remaining ingredients with 1 cup hot water. Pour over the beans. Add enough additional hot water to cover the beans. Place lidded baking dish in a 300 degree oven for 4 hours. Add additional water as beans cook. |
