ZUCCHINI RICE CASSEROLE 
3 tbsp. olive oil
1 med. chopped onion
6 med. chopped zucchini
2/3 c. cooked rice
1 1/2 c. grated Swiss cheese
1 1/2 c. grated Jack cheese
1 c. grated Mozzarella cheese
1/2 c. chopped parsley
1 lg. beaten egg
Salt and pepper
2 tbsp. bread crumbs
1 tbsp. olive oil

Preheat oven to 375 degrees. Heat oil, saute onion until soft. Add zucchini and cook covered 10 minutes over low heat, stirring occasionally, remove from heat and allow to cool slightly. Add remaining ingredients except crumbs and olive oil. Mix well. Place in a greased 1 1/2 quart baking dish. Sprinkle with crumbs and olive oil. Bake uncovered 1 hour at 375 degrees.
