ZUCCHINI - RICE CASSEROLE
ITALIANA
 
4 c. thinly sliced zucchini
1 lb. ground beef
1 c. chopped onions
1 clove garlic, crushed
1/2 tsp. salt
1 tsp. basil
1/2 tsp. oregano
1/4 tsp. pepper
2 c. cooked rice
1 (8 oz.) can tomato sauce
1 egg, beaten
1 c. cottage cheese
1 c. shredded Cheddar cheese

Cook zucchini covered in small amount of boiling water 2 minutes and drain. Combine beef, onion, garlic and spices. Cook until meat is browned, stirring until meat crumbles. Drain off excess fat. Add rice and tomato sauce.
