BAKED BEANS 
3 qts. dried navy beans
2 lbs. fat salt pork
4 tbsp. salt
1/3 c. brown sugar
1 tbsp. prepared mustard
1 tsp. pepper
1 1/2 c. molasses
1/4 c. vinegar
Boiling water

Pick over beans and wash. Drain then cover with cold water and soak overnight. Drain beans, cover with cold water. Bring to boil and boil 15 minutes or until the skins burst.

Scrape and scald the pork rind. Cut the pork in 2 pieces; cut through rind every half inch to the depth of 1 inch.
