BANANA CAKE 
1 1/2 c. flour
1 tsp. baking powder
2 eggs
1/4 c. sugar
4 ripe bananas
Juice from 1/2 lemon

Preheat oven to 350 degrees. Grease well and lightly flour loaf pan, 8 1/2 x 4 1/2 x 2 1/2 inches in size.

Peel and dice bananas. Place fruit in mixing bowl and mash. Toss with lemon juice. Add eggs and sugar to mashed bananas, mixing with wire whisk until smooth. Then add flour and baking powder. Mix gently.

Pour into loaf pan and bake 30-40 minutes until cake tests done with a toothpick. Remove from oven and turn out to cool.
