SUPER FAST TUNA SANDWICH FOR
ADULTS

In memory of Maureen Dodd, B. P., WA, about 1955. Long before 'Playdates', lunch was always better at Maureen's house. Pickles and Kool-Aid made it so! -cedarglen

bread of choice (better quality makes a better sandwich)
1 (7 oz.) can solid white Albacore tuna - no substitutes! (flaked, 'light' tuna is for the kids and don't bother here)
mayonnaise, as needed (perhaps 3 tbsp. or maybe more per your taste)
solid, crisp, cold whole dill pickles (kosher or garlic are great, but do it matter in this simple sandwich?)
dash of red pepper or Tabasco sauce, if desired
romaine lettuce leaf

Open tuna can and squeeze out as much water as possible. Turn into bowl and mash with a fork until very fine. Mash a little more! Stir in about 2 tablespoons mayonnaise thoroughly. Add more if necessary, more is better!

Toast fresh bread of choice, if desired. If not toasting, a quick warming shot is good. Cut ends from pickles and slice length-wise, as thin a possible (bread knife?)

Apply tuna mixture, top with pickle slices and lettuce. Serve with top bread, or open-faced.
