VIRGIN ISLAND CHICKEN 
1 whole, cut up chicken
6 oz. can sliced black olives
2 (6 oz.) cans chicken consomme
1 sm. chopped onion
7 stalks chopped celery
4 c. uncooked rice

Bake chicken with seasoning salt for 1 hour at 350 degrees. Pour rice into a 13 x 9 inch pan. Then add celery, onion and olives on top. Then add chicken consomme. Then place chicken and drippings on top of that. Cover and bake for 1 hour at 350 degrees.
