SWEET POTATO SOUFFLE | |
6 very lg. sweet potatoes (8) 1 c. sugar 1 tsp. salt 2-3 eggs (use extra lg.) 1/3 stick butter 1/2 c. milk 1 tsp. pure vanilla extract (1 1/2 tsp.) Cook potatoes in jackets in pot with water up near top of potatoes. Let cool out of water enough to remove pot peel. Preheat oven to 350 degrees. Mix all the above with electric mixer until light and fluffy. If still stiff, add more milk until light and fluffy. Spray 11x14 inch casserole with Pam or butter. Pour in the mixture and smooth out evenly. Preheat oven to 350 degrees. Bake 25 minutes. Then top with marshmallows. Return to oven and lightly brown marshmallows, approximately 5 minutes. Serve very hot. VARIATION: Before any baking, use the following topping: 1/3 c. plain flour 1/3 stick butter 1 c. broken nuts Mix all together and spread on top. Cook at 350 degrees for 30 minutes. |
