CHOCOLATE STOUT BREAD PUDDING | |
1 (12 to 16 oz.) can or bottle of dark stout beer (I use Guinness) 1/2 cup cream 1/2 cup sugar 1/2 cup chocolate chips 4 eggs 2 tsp. vanilla extract 1 large loaf of bread, cubed (crusty bread adds nice texture) Preheat oven to 325°F. In a medium saucepan add beer, cream and sugar and whisk sugar until dissolved. Once mixture is a little warm add chocolate chips until melted. Remove from heat. Is a separate bowl whisk eggs and vanilla extract. Slowly whisk in the above ingredients. Be careful (not too fast) or you will have scrambled eggs! Add CUBED bread to mixture and let sit for a good 3 minutes to soak up liquid. Transfer everything to a shallow baking dish - it may seem like a lot of liquid - DON'T WORRY!! Sprinkle a few more chocolate chips on top and a little more sugar on top (this creates a nice sweet crunchy layer). Bake at 325°F for 50 to 60 minutes.
