CHEESE TREE MOLDS 
butter
Minced parsley
1/2 lb. sharp Cheddar cheese, grated
1 (8 oz.) pkg. cream cheese
1/2 c. mayonnaise
1 tsp. Tabasco sauce
1 tsp. onion, minced
1/2 c. heavy cream, whipped

Grease 4 (6 oz.) cone-shaped paper cups, preferably the kind you get with an open bottomed plastic coffee cup. Generously sprinkle each with parsley. Pat into butter to cover completely. Blend cheese, mayonnaise, Tabasco sauce and onion. Fold in whipped cream. Carefully spoon mixture into molds. Chill at least 2 hours, better 24 hours. Will keep refrigerated a few days or freeze and thaw in refrigerator awhile before using.

To serve, unmold (that's why paper cups work best, just tear off and patch up the parsley, if necessary); arrange with crackers and knife on serving dish/wood cheese board. For Christmas holiday, decorate with green olive on top, bits of pimento or red pepper or carrot for "ornaments." For larger group of people, serve "twin trees." I double or triple the recipe in early December before things get hectic, freeze them and use as needed. If leftover after a party, it makes a nice sandwich filling.
