TORTONI SQUARES 
1/3 c. toasted almonds
3 tbsp. melted butter
1 1/2 c. finely crushed vanilla wafers or graham crackers
1 tsp. almond extract
1 (12 oz.) jar apricot preserves
3 pts. vanilla ice cream, softened

Mix vanilla wafer crumbs, almonds, extract, and butter. Put layer of crumbs in bottom of 9 inch square dish, buttered, then layer of ice cream and layer of apricot preserves. Sprinkle with crumbs. Repeat layers, ending with crumbs on top. Freeze several hours until ice cream is firm. Cut in squares. I double crumb recipe. Also, I put preserves in a bowl and stir well, they spread easier. Can use Ameritto cookies also.
