CHARLESTON RED BEANS AND RICE 
1 lb. red beans
2 or 3 ham hocks
1 c. chopped bell pepper
1 c. chopped celery
2 c. chopped onion
4 or 5 chopped garlic
2 or 3 bay leaves
1/4 tsp. oregano
1/4 tsp. thyme
1 tsp. cayenne pepper
1 tbsp. Tabasco
Water, salt & pepper
1 lb. smoked sausage

Wash beans and add water to cover, bring to a boil, turn off heat and let sit 1 hour, covered; drain. Add water to cover. Add all other ingredients, except sausage and cook until beans are very tender, an hour or more. Add sausage and cook another 20 to 30 minutes. Add more water as needed during cooking. Serve over rice.
