NEW ORLEANS RED BEANS AND RICE 
2 c. sm. dark red beans
1 lb. cubed ham and 2 lg. ham hocks
1 med. onion, diced
1 med. green pepper, chopped
2 cloves garlic, finely chopped
8 c. water

Bring all ingredients to a boil - reduce heat. To simmer for 5 hours, or until done. (If beans become dry, add heated water.) Add salt and pepper to taste. Serve over cooked rice.
