HARVEST CAKE 
1/2 c. shortening
2 c. sugar
2 eggs
2 c. flour
1/2 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda
3 c. diced apples
1/2 c. nuts

Cream together shortening, sugar, and eggs. Sift together flour, soda, salt, and cinnamon. Add to creamed mixture. Beat well. Blend in 3 cups diced apples. Add nuts. Pour into 9 x 13 inch pan. Bake at 350 degrees for 55 minutes. While cake is still hot, pour on topping of 1 small can crushed pineapple (drain off small amount of juice) mixed with 1 box powdered sugar. Good served with whipped topping.
