CINNAMON TOAST CAKE 
2 c. whole wheat pastry flour (available at Sun Harvest)
2/3 to 3/4 c. turbinado sugar (available at Sun Harvest) or white sugar
2 tsp. baking powder
1 tsp. salt
1/2 c. oil*
1 c. milk
1 tsp. vanilla
1 to 2 tbsp. butter
1 tbsp. cinnamon
6 tbsp. sugar

*For a lower fat version, replace the 1/2 c. oil with 1/4 c. oil + 1/4 c. applesauce.

Combine first 4 ingredients in a bowl. In a separate bowl, mix next 4 ingredients. Combine wet and dry mixture. Spread batter in a greased 9 x 13 inch pan.

Bake at 350°F for 20 to 25 minutes or until a toothpick comes out clean.

While cake is baking, combine cinnamon and remaining sugar in a small bowl. When cake is finished baking, immediately spread butter on top, turn oven to Broil, and sprinkle liberally with cinnamon-sugar mixture. Pop cake under the broiler for 1 minute or until top is bubbly. Watch closely so it doesn't burn.
