HARVEST CAKE 
4 c. coarsely chopped apples
2 c. sugar
2 eggs
1/2 c. vegetable oil
2 tsp. vanilla
2 c. sifted all-purpose flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1 c. chopped walnuts

Combine apples and sugar and let stand. Beat eggs slightly in mixing bowl. Beat in the oil and vanilla. Mix and sift flour, soda, cinnamon and salt and stir in alternately with apple sugar mixture. Stir in nuts. Pour into greased and floured oblong pan (top springs back when lightly touched).

Do not open oven door for half hour or longer to prevent cake from falling. When removed from oven, let stand in pan until quite cool. May be served from pan.
