POSH POTATO SALAD 
8 boiled, peeled potatoes
1 grated medium Bermuda onion
1/2 c. green tomato relish
1/4 c. sweet pickle juice
1 sm. jar pimentos
4 stalks celery (cut fine)
1 tbsp. Blue cheese
Mayonnaise
Sliced mushrooms
Dry mustard
Hot-sweet Chinese mustard
Salt and pepper
Paprika
Parsley
Sliced tomatoes
Hard-boiled eggs
Italian dressing
Lemon juice

Cut potatoes into 1/2 inch cubes. Sprinkle with Blue cheese, paprika, salt and pepper. Add mushrooms, celery, onion and tomato relish, pickle and lemon juice. Cover with small amount of Italian dressing. Stir. Add mayonnaise and Chinese mustard. Blend to taste. Garnish with tomato and egg slices and parsley.
