BACKYARD BARBECUED CHICKEN SANDWICH | |
4 boneless, skinned chicken breasts, 6-8 oz. each 8 slices Canadian bacon 1 c. shredded Monterey Jack cheese MARINADE: 1/4 c. vegetable oil 1/2 c. red wine vinegar 1 c. smoked flavored BBQ sauce Marinade chicken breasts (at least four hours; best if marinated overnight). Grill chicken about 8 to 10 minutes on each side on the barbeque (you can also use broiler in oven). Baste chicken with reserve marinade while cooking. Place 2 pieces bacon and 1/4 cup cheese on each breast after they have cooked 10 minutes on each side. When cheese is melted to your desire, remove from grill. Serve on a Portuguese roll or kaiser bun. |
