AUNT MERIAM'S COUNTRY CAPTAIN
CHICKEN
 
1/2 c. flour
1 1/2 tsp. salt
1 fryer, cut up
1/4 c. oil
1 onion, chopped
1 bell pepper, sliced
1 clove garlic, minced
1 (3 oz.) can mushrooms
1 (8 oz.) can tomato sauce
2 c. water
1/4 tsp. Tabasco
1 tsp. curry powder
1/2 c. currants or raisins
Toasted slivered almonds

Flour and salt chicken. Brown in oil; remove. Add onion, bell pepper, garlic and mushrooms. Cook 3 minutes. Blend in tomato sauce, water, seasonings and currants. Mix well. Replace chicken. Cover, simmer 30 minutes, or until done. Delicious with rice and garnish of nuts. Serves 4-6.
