LISA'S COWTOWN COMFORT STUFFED
JALAPENOS
 
fresh jalapenos, cut lengthwise and scooped out
8 oz cream cheese, softened
4 oz finely shredded Pepper Jack cheese
1 jalapeno, seeded and chopped fine
1/2 pkg Ranch Dressing mix
6 pieces crisp bacon, crumbled
plus bacon cut into 3rds and pre-cooked to limp stage and drained (one piece of bacon for every 3 peppers)

Cut peppers into halves and hull them out. Rinse and drain. Place right side up on a greased cookie sheet.

In the bowl of a mixer, combine the cream cheese, shredded Pepper Jack cheese, Ranch Dressing Mix, crumbled bacon, and the chopped and seeded jalapeno. Blend all ingredients together in mixer until well blended.

Put mixture into a pastry bag and pipe into the Jalapenos. Top each pepper with 1/3rd piece of the partially cooked bacon. Place under the broiler until bacon is crisp.

This is also great with shrimp and crab meat added instead or with the crumbled bacon.
