OATMEAL RAISIN MUFFINS 
1 1/4 c. sifted flour
2 1/2 tsp. baking powder
1/2 tsp. salt (opt.)
1/4 c. brown sugar
1 c. quick cooking oats
1/2 c. raisins
1 egg, beaten
1 c. milk
1/4 c. vegetable oil

Sift together flour, baking powder and salt. Stir in brown sugar, oats and raisins. Combine egg, milk and oil. Make well in center of dry ingredients and pour in egg mixture. Stir only until moistened. Turn into well greased muffin tins. Bake at 400 degrees for 20 to 25 minutes or until golden brown. Makes 9 to 10 muffins.
