SOUTHERN STRAWBERRY COBBLER | |
I use this recipe for all fruit, peaches, blackberries, blueberries and my favorite: Apple! When you do the apple, remember when you add your sugar to your fruit, you can add 1 teaspoon of cinnamon and 1 teaspoon of cloves and stir and let sit for 15 minutes. Have fun and enjoy this one! 4 cups strawberries 1 cup sugar and 1/2 cup sugar: separate containers 1 cup self-rising flour 1 cup cold milk 1/4 tsp. vanilla flavor 1/4 tsp. butter flavor 1/2 cup (1 stick) butter Note: To make self-rising flour, use 1 cup all-purpose flour minus 2 teaspoons of flour and put 1 1/2 teaspoons of baking powder and 1/2 teaspoon salt. Stir together. I always use fresh strawberries for this recipe. Clean berries with a damp paper towel first and foremost. Never.. Ever... water your berries in a colander folks. Berries absorb water, which takes away from the flavor. Cap them and slice them. In a bowl add your 4 cups of strawberries and 1/2 cup of sugar. Let this sit for about 15-20 minutes. In a separate bowl, add 1 cup of each: flour, sugar, cold milk and flavoring. Stir it up. It is FINE TO LEAVE SOME LUMPS... In your favorite baking dish or pan (I believe mine is an 11x7-inch, but you can do it in an 8x8 or a 9x9-inch), whatever you like to use. In your microwave, melt your butter and pour into your baking dish. Then spoon in your fruit, evenly. Next, pour your batter over the fruit. Try and be even with it, but don't spoon it once it is in the pan. Bake at 350°F for about 45 minutes to 1 hour depending on your elevation or just the way your oven bakes. About 10 minutes before you take out of the oven, you can sprinkle a little sugar for that little crunch on top if you like. Serve hot with vanilla bean ice cream!!! Submitted by: Natalie Biggs |
