STRAWBERRY PEACHY COBBLER | |
I live in a small Alabama town where you can pick strawberries and peaches at almost a dozen different "U Pick" farms and the peaches grow as large as soft balls! With all this bounty its always a toss up whether to make a strawberry or peach cobbler so we came up with a delicious solution! 2 cups sliced ripe strawberries 2 cups chopped ripe peaches 2 cups water 2 1/2 cups sugar, divided 3/4 cup (1 1/2 sticks) salted butter 2 cups self-rising flour 2 cups milk Put strawberries and peaches each in 2 small boilers with 1 cup water and 1/4 cup sugar. Heat just until warm enough to melt sugar, turn heat off and stir to completely dissolve sugar. Let sit. Melt butter in 13x9-inch baking pan in 350°F oven. Mix remaining 2 cups sugar and flour then pour in milk and stir until well blended. Pour flour and milk mixture into melted butter evenly. Ladle peaches and strawberries into pan with a slotted spoon, placing peaches on one end and strawberries on the other. Carefully ladle the sugar water left from fruit over the entire cobbler until all is used. Bake in 350°F oven for 45 minutes or until crust is browned on all edges. Submitted by: LJR |
