OATMEAL - RAISIN MUFFINS 
1 c. sifted all-purpose flour
3 tsp. baking powder
1/4 c. shortening
1 c. quick-cooking rolled oats
1 egg
1 c. milk
1/2 c. brown sugar
1/2 c. raisins
1/4 c. sugar
1/4 tsp. cinnamon

Sift together flour, baking powder and 1/2 teaspoon salt; cut in shortening until like crumbs. Stir in rolled oats. Combine egg, milk and brown sugar; beat well. Stir into dry ingredients; add raisins; spoon into paper baking cups in muffin pans. Combine granulated sugar and cinnamon. Sprinkle over batter. Bake in 425 degree oven for 15 to 20 minutes. Makes 12 muffins.
