2 gallons cucumbers, sliced tenth-wise 2 c. salt, dissolved in 1 gallon boiling water Pour over cucumbers and let stand 1 week, stir every day. Drain and cover with clear boiling water, let stand 24 hours. Drain again. Cover with 1 gallon boiling water and 2 tablespoons alum (dissolved). Let stand 24 hours; drain. Boil 2 quarts vinegar with 16 cups sugar. Take this and 1/2 box mixed spices and pour over cucumbers. For 3 days reheat syrup and pour back over cucumbers. On the 4th day heat syrup. Put cucumbers in jars. Pour syrup over them and seal. |
