ELEVEN - DAY PICKLES 
7 lb. cucumbers
1 pt. salt
Water
Vinegar
Pinch of alum
5 c. sugar

Soak cucumbers in brine of 1 pint salt and 1 gallon of water. Drain on fourth day. Cover with fresh water and let stand 3 days. On the seventh day, drain and slice in 1/2 inch pieces, if desired. Let simmer in weak vinegar for 2 hours to which a pinch of alum is added. Drain. Make syrup of 3 pints vinegar and 5 cups sugar.
